Happy Hour- Pesto Ala Mode
The flags are waving, propane tanks are being filled and fireworks are ready to explode - it's the 4th of July! The best summer holiday. I'm super excited about the refreshing drinks I'll be enjoying but let's not forget the easy summer happy hour foods I'll be serving. So put on your flip-flops, grab something red, white & blue, blare some Jimmy Buffet and let's get happy!
Here's what will be at my happy hour tonight:
Drink this:
Zefiro Prosecco, Veneto, Italy
One thing I'm really excited to be drinking this summer is champagne along with all the other bubbly drinks! Prosecco is sparkling wine from Italy which can be a little sweeter and a little more mellow than other sparkling wines. This one is 95% Prosecco and 5% Chardonnay. The characteristics include peaches, floral scents and some citrus. It's perfect with most brunch items, meats & cheeses, fish, and salads.

2005 Chalone Pinot Noir, Monterey, CA
I still need to get my fix of red wine during the summer. This is a perfect Pinot Noir for warm temperatures. It's a gorgeous burgundy and rose color, medium-bodied wine. The characteristics include black cherries, raspberries, cola with some cloves and nutmeg. It's perfect with salmon, red-sauced pasta and medium-flavored cheeses and cured meats.

Serve this:
Pesto Ala Mode
1 cup store bought Pesto
1 package softened cream cheese
1 package pine nuts.
Pour Pesto onto a platter. Fill and ice cream scoop with the cream cheese and scoop into the middle of the pesto. Sprinkle the pine nuts over the top and serve with toasted baguette or crackers of you choice. It's that easy and really delish.
